I could go for my Vegan Sweet Potato Soup, or perhaps my Vegan Mushroom Soup, but then I stumble upon a recipe for lasagna soup and decide to give it a little veganise.
From the first spoonful, I'm hooked – the rich tomato broth, the hearty noodles, the melty creamy layer on top... it's like a big, comforting hug in a bowl. And guess what? It was ready in 20 mins, only used one pot and was completely vegan! So naturally, I'm thrilled to share with you my own take on this beloved classic – Vegan Lasagna Soup! For those unfamiliar with this comforting creation, Vegan Lasagna Soup takes all the delicious flavours of traditional lasagna and transforms them into a rich, satisfying soup (more like a stew tbh, but we won't split hairs). It has all the flavours and textures of a classic vegan lasagna, but it's prepared without any of the layering and baking, so you'll have hardly any washing up to do afterwards. - Vegan mince (aka ground)
- Cloves garlic (minced)
- Italian dried herbs
- Light brown sugar
- Ground black pepper
- Can of crushed tomatoes
- Tomato puree (aka tomato paste)
- Vegan broth or stock
- Lasagna sheets (uncooked, snapped into four pieces)
- Water
- Vegan cream cheese (or Oatly Creme Fraiche)
- Vegan cheese (shredded)
- Fresh parsley or basil (for serving)

- Vegan Cream Cheese: This ingredient brings the creamy element of the vegan lasagna. A dollop of Oatly Creme Fraiche will work wonderfully too, or even some vegan Greek yoghurt.

Sauté: Heat olive oil in a large pot, then add chopped onion and cook until softened. Add vegan mince and minced garlic to the pot, and cook until nicely browned.
Simmer Soup: Stir in herbs, brown sugar, black pepper, crushed tomatoes, tomato puree, and vegetable broth. Bring to a simmer, cover, and cook.
Add Noodles and Finish: Stir in broken lasagna sheets and water, simmer until noodles are cooked.
Serve: Serve hot, topped with vegan cream cheese, shredded vegan cheese, and fresh herbs.

Ingredients
- ½ tablespoon olive oil
- 1 onion finely chopped
- 2 cloves garlic minced
- 300 g vegan mince aka vegan ground
- 1 teaspoon dried oregano
- ¼ teaspoon dried thyme
- ½ teaspoon dried parsley
- 1 teaspoon flaky sea salt
- 1 tablespoon sugar
- ½ teaspoon ground black pepper
- 1 x 400g can chopped tomatoes
- 1 tablespoon tomato puree aka tomato paste
- 700 ml vegan broth or stock
- 8 lasagna sheets
- 120 ml boiling water
- 4 tablespoon vegan cream cheese or Oatly Creme Fraiche, for topping
- Fresh parsley or basil for serving
Instructions
- Heat the olive oil in a large pot over medium heat.½ tablespoon olive oil
- Once hot, add the onion and cook for 3-4 minutes until it begins to soften. Follow with the garlic, cooking for an additional minute.1 onion, 2 cloves garlic
- Add the vegan mince/ground to the pot and fry for 2-3 minutes, stirring occasionally, until browned.300 g vegan mince
- Add the dried herbs, salt, sugar, black pepper, chopped tomatoes, tomato puree and stock/broth. Bring to a simmer and cook for 10 minutes, stirring occasionally and crushing any large pieces of tomato with your spoon.1 teaspoon dried oregano, ¼ teaspoon dried thyme, ½ teaspoon dried parsley, 1 teaspoon flaky sea salt, 1 tablespoon sugar, ½ teaspoon ground black pepper, 1 x 400g can chopped tomatoes, 1 tablespoon tomato puree, 700 ml vegan broth or stock
- Break the lasagna sheets into quarters and add them to the pot along with the 120ml boiling water. Ensure the lasagna sheets are submerged. Cover the pot with a lid and let it simmer for 10 minutes, stirring occasionally, or until the pasta is al dente and the soup has thickened slightly.120 ml boiling water, 8 lasagna sheets
- To serve, ladle the soup into bowls, topping each with a dollop of vegan cream cheese (or Oatly creme fraiche).4 tablespoon vegan cream cheese
