This is a real treat. If you have a hangover and can persuade someone to make this for you, I guarantee you’ll be cured. It’s salty, umami, crispy and the soubaise sauce will blow your mind. It’s a freakin’ VEGAN SHIMEJI STEAK SANDWICH!
The baby bok choi is completely optional but it’s currently my favourite leaf and it works so well whether raw or cooked. In this case, it adds a kick of irony freshness which I think you’re going to love. Watercress does the same trick if you can’t find baby bok!
You’ll have a fair bit of soubaise sauce left after this so jar it up, stick it in the fridge and pop it on your next beyond burger!
